We see stories like this all the time. The problem here is you seem not to have cared about these things when you had sex with him. The court will look at that if you try to deny him custody.

Is he asking for custody? If not, then why open a can of worms by going to sole custody? Are you also looking for child support?

See if you can get an emergency court order to keep him away from your child. Then try to convince the child services/judge via your lawyer, that the sperm donor is not right in his head, and see if you can force him to be examined.

If he is found to have mental problems then you should be able to get full custody and maybe if he is granted visitation insist it he never left alone with the child. That depends on the results and recommendation of the examiner, I assume.

First, a sperm donor is someone who provides sperm to infertile couples so they can have a child. The OP chose to have sex with this man, so lets tell it like it is.

Second, We don't know if this man has tried to see the child. The OP said he is denying him. So why should she go for an order, especially an emergency one, to keep him from the child unless he's actually trying to see the child. Time enough for a court order if he asks to see the child.

As for his mental stability, he was stable enough to have sex with. All of sudden he is unstable?

I'm not saying the OP won't get full custody if she tries for it. I'm saying we don't know enough at this point.
