You don't want to install a metal standing seam over old shingles
The heat build up will melt the shingles!
Can you tell me why you are thinking that?

If you have 3/4 plywood under your shingles you can install metal right on top. If you have 3/8 or 1/2 inch plywood then you need at least 3/4 inch perlins across the roof rafters. Good luck for an online video just Google " metal roofing "

I install metal roofs and I never heard this approach or questions before. What pitch is this roof and style? And Why not shingles or rubber roof as opposed to mineral roll?

I had what's called a roofover on my double wide mobile home in South Florida installed right over the existing shingle roof. They put insulation ontop of the shingle roof and then put the metal roof over that. The metal was a specially coated material that was cool to the touch regardless of how hot it got. Can't remember the name as this was back in the early 1990's. Worked great. Kept my home cool in summer and warm in the winter.

Metal roofing over shingles is becoming fairly common in this area. The usual method is to use 3/4" perlins as mikedem7 mentioned. The heat buildup is no worse than if the sun was shining directly on the shingles. Shingles do get soft on sunny, hot summer days, whether exposed or under metal, but they don't nearly reach temperatures that would melt them.
