another girl? I had no idea the co-worker I liked as a friend (because I am not attracted to him) had a girlfriend! I asked to swap numbers, he hesitated and told me how busy he was.. then asked if I hung out with other people from the store. I said no. Eventually we swapped numbers and he told me he would text me for coffee. A week goes by, I hear nothing. So I text him and it all goes well until I said "I rather see you face-to-face". He ignores it. 2x weeks later I texted him again and said something friendly and mentioned we should get coffee. He ignores the coffee part but acknowledges everything else. BTW HE HAS ALWAYS treated me like a friend.
A week later he shows up to my work to say "hi" to me and his manager. He says he couldn't get back to me because he had been "so busy". I know he is attracted to me and finds me interesting but he always spoke to me like a friend so I am totally lost. His manager told me that she had a hard time believing he specifically came to say hi to her.

Why do some people generalize about all guys? Not all guys are like this at all.
I can't really follow the story. You keep trying to get together with a guy you aren't attracted to, but you are sure he is attracted to you, but you mention that he has a girlfriend at the beginning, but leave that hanging - it's not clear when you found out.
I am confused as to why you are confused. It sounds like YOU are totally confusing HIM by hounding him if you aren't attracted to him and he would like to know if maybe you are. What you are doing isn't how it's done. 'Just friends' of two genders are either gay or they just fall into it through hanging out in general.
