Telephone wiring to your handset is "twisted pair," so you have two wires connecting your telephone handset to the telephone company's outside wires. FYI - in telephone jargon these two wires are called "tip" and "ring," which alludes to old-style phone jacks that they used to use with manual switch boads in the old days.

The wiring in the outside telephone plant may also be twisted pair, typically bundled into cables that may have from 25 to up to several hundred pairs in them. In many cases the telephone company deploys digital carrier technologies to bundle traffic from an entire community back to the central office where it enters the larger telephone network - these carrier system typically use fiber optic technologies.

Some telephone companies (like Verizon) are now deploying fiber optics right into the end user's home. This alows them to bundle your voice telephone signals with internet access and TV. The fiber cable is connected to elecronics that splits out the telephone line and internet onto twisted pair and the TV onto coax or other media that is compatible with your TV set.
