240 vac 60 amp circuits

 I am installing 2 240volt 60 amp circuits for tankless water heaters. Do these neet to be run in a conduit? I am using #6 THHN which should be ableto handle 75 amps in this application.

 I'm looking at getting some tools that will require having 220 for them. My main panel is full right now and has several Slim/Tandem/double breakers in it already. Reading some things on the net I see that the panel might be exceeding the limit it should have for breakers, but don't know at this...

 I am hooking up a 15kw generator with auto transfer switch to a 200 amp service house. The transfer switch has two 240 circuits available, along with 5, 15 amp circuits, and 3, 20 amp circuits. I am trying to decide how to use the 240v circuits. 1)Kitchen oven, 2)Laundry dryer, or just not hook up...
