What can I press charges for
My ex and I are fighting, and he's threatening to throw my stuff by the dumpster, or in his yard. If he does, can I press charges? Or get a restraining order? He's 21, and I'm 19. We both live in Florida.

If he does, yes, but your stuff will all be destroyed or gone, when he throws it out,
Why not just take your stuff and move, then you do not lose all your belongings

No, I don't think you can have him prosecuted for a crime.
Instead of trying to figure out if a crime has been committed, the police are likely to tell you that "It's a civil matter" and to take it to divorce court. Or, if you are not married, to small claims court.

He's your ex, you say. Presumably ex boyfriend and not ex husband. Presumably you now live elsewhere. So why is your stuff still at his place? It can be considered abandoned after some time according to local ordinance where he lives (usually 30, 60, or 90 days).

Do you have relatives who can go pick up your stuff? You should get your stuff out of there ASAP.

If he owns the place or is the renter on the lease, this may apply:
Florida § 715.04 et seq.
"The landlord must send a notice, to the place the tenant is expected to receive it, that (1) describes the property in sufficient detail for the tenant to identify it, (2) advises him that he has 10 days (15 days if the notice is mailed) to claim it, (3) appraises him of reasonable storage costs, and (4) tells him where to claim the property.
The notice must also inform him that unclaimed property of value will be sold at a public sale and property believed to be worth less than $500 will be kept, sold, or destroyed.
After deductions for storage, advertising, and the sale, landlords must turn over to the county any residual proceeds."
(In other words, if he thinks your property is worth less than $500, he can throw it out 15 days after sending a notice to your last known address. It doesn't have to be Belize.

In my state you notify the police and arrange a time they can go with you (or a relative or friend on your behalf). They escort to the premises and are given approximately 15 to 20 minutes to get your belongings out. Make a list for your pick up person. Then whatever isn't with the stuff you take him to small claims. Send him a certified letter with a list of the stuff and tell him to have it at the door -day and time- or you are taking him to court.
