Yes, you can smoke chicken. Although, I wouldn't recommend it. It'll pick up the smoke flavor quicker than other meats and is easy to over smoke. Also, the skin tends to become tough. If you really want to smoke chicken, I'd recommend doing a whole bird standing up with a (open) beer can inside. It'll help keep it moist. My favorite way to cook chicken is to grill it over a low charcoal fire for at least an hour.

Uhh... yes you can smoke chicken and I WOULD recommend it... use a mellow wood like mesquite... you can't over smoke any meat... after about two to three hrs the meat will not take any more smoke flavor in and you are just wasting wood... I slow smoke mine in a smoker cabinet... whole birds... smoke them for 3 hrs... then slow cook for another 3 to 4hrs depending on size at 212 degree's... they come out golden brown and as moist as you can get with a awsome smoky flavor
