I have a white,red, and black wire coming out of the box. Black for one switch and red for another. Instructions say to wire blue and black from fan to black out of box. Can I wire black to black and blue to red to be able to be able to use two switches?

Sure, no problem, the blue on the fan is the light, and the black is the fan motor.
