Use a glass pie pan and set your oven rack down 1 row.

Are you pre-baking the crust? Prebaking the crust helps the dough turn into a crust and to setup so that it won't become soggy from the filling. This is usually done by covering the dough bottom with dry bean, to prevent it from rising. You can also cover the edges of the crust with tinfoil.

Does covering the edges with tin foil prevent them from burning?

Yh you need to blind bake the crust. Put it in the oven for 15 min make sure you dock it with a fork so it doesn't rise. Oh and 350 degree oven. Let cool add filling then bake
