I have a corroded shut off valve on my toilet that I need to change, I tried to turn it and it broke off on one side of the valve, how do I go about putting in an all new shut off valve assembly, any help would be much appreciated.

I've put up a selection of angle stops. Yours should be one of them.
If you have a stop with a large compression nut then purchase a replacement, shut the water off to the house and remove the old valve body.
You mat now install the new stop on the old nut and ferule. Easy fix!
If your stop is soldered on you can simply swap the innards, (the stem and washer assembly) of the new one for the old one keeping the old valve body.

Tom have given you good choices of the angle valves, I will also suggest to replace your old shut off valve with a Brass Craft quick connect 1/4 turn shut off valve, they are easy to install and no tools needed, make sure that you have enough pipe remaining after you remove the old valve a minimum of 1 1/2" pipe is needed, see the images below, good luck.
