    Adjustment of status
I have a b2 tourist visa and my mother has the green card. She filed the I 130 form for me 2 years ago and I got the petition approval after one month (that is its in process). I am still waiting for the interview. Is it possible for me to adjust my status from a tourist to a green card holder after I enter the u.s? In other words can I file the I 485 form for adjustment of status?

No, you cannot enter on a tourist visa with intent to file for AOS while there. You should complete the process at your local U.S. consulate.

No, you can't file I-485 in US, consular processing only.

    B1/b2
Can I file for adjustment of status to permanent residency if I have B1/B2 visa? Knowing that the I130 petition was accepted already and I am waiting for an interview to be scheduled.

You cannot intend to enter the U.S. on B1/B2 and adjust status.

    Consular processing
How long does the consular processing take for the I130 petition? I mean how much time it takes the immigration office to schedule the interview?
