How can I estimate metobolic rate as it relates to alcohol elimination?
After searching many online calculators to determine an accurate BAC, as tested by urinalysis, I have repeatedly come across references to metabolic rate as a contributing factor. How would I determine this?

Urine Alcohol Content (UAC) is not the equivalent of BAC. UAC will vary dependent on phase of drinking, absorption, distribution, elimination. UAC is lower than BAC during the active drinking phase and higher after consumption has ceased, elimination phase.

Providing the individual is in the elimination phase, then it is possible to approximate the alcohol metabolism rate by sequential measurement of UAC from one void to the next. That requires an instrument that can provide a quantitative reading... not something that can be done at home.

Alternatively, you can use the population average for elimination (metabolism) of .015 per hour. In that case once the BAC is known, say it is .08, then you simply divide by .015. Example .08/.015 = 5.33 hours.
