    How does my mother change the names of the Grantees on an existing quitclaim deed?
    A couple of years ago, my mother signed a quitclaim deed with my sister and me as the grantees. She now wants to have me as the only grantee. Can she sign a new quitclaim deed and have it override the previous one?

    Is there specific language that should be in the new quitclaim deed that refers to the override / update to the original document?

    No. Your sister would have to sign a new deed to you.

    As it stands now, you and your sister are joint owners. Your mother has no remaining interest in the property, so a deed from her would have no effect.
