    How to plan a meal of only vegetables?
    If you had to cook/plan meals with only vegetables, (NO beans No meats, No legumes) what would you fix?

    What can you put with the veggies?

    I love butter nut squash baked with a little butter and brown sugar.

    Or sweet potatoes baked with fresh squeezed orange juice and honey.

    Stir fries are yummy too. Mushrooms, cabbage, carrots, snap peas, any other favorite veggies and your favorite stir fry sauce.

    You can't go wrong with jmjoseph's suggestion. A salad bar can be all veggies.

    Someone else on here once gave me a recipe for crockpot green beans cooked with ham, potatoes and onions. I'm sure it would be tasty even without the meat though. You could substitute mushrooms to make it a little heartier.

    We don't eat out so a salad bar isn't a option. Hubby doesn't eat much salad either.

    Zucchini right off the grill is really good. With just a little olive oil and maybe some salt and pepper.

    I only like certain kinds of salad. They have to have things I like in them. And sometimes they almost turn into fruit salad with baby greens. Or you could try different sorts of slaws. I don't care for traditional cole slaw much. But I've tried some really good broccoli slaws, with dried cranberries and pecans. I've even had carrot slaw before that wasn't too bad. I don't remember what else was in that one though.

    What veggies do you and your husband both like?

    Pizza crust
    Flavorful sauce
    Eggplant
    Cheese

    It actually is very very good:)

    Tomato basil pasta w/romano cheese
    Garlic bread
