2 year old sneaks out of bedroom
I have a 2 year old son, who has just learned how to open door knobs. I have found him a few times now in the kitchen. One time there was a knife he was getting off the counter when I caught him. I am afraid that something serious could happen when he is doing this. However, I am afraid to put a safety handle on his door knob in case of a fire. He is using a chair to climb or anything he can find. The other thing is it is dark in my house once we go to bed. There is not one light on. I don't know what to do my other two children never did this.

How about a safely gate at his bedroom door?
Make sure his room is safe,plugs etc,and he can't climb on top of anything...

I would hang a sting of Christmas bells on the doorknob, so you can at least hear him.
Put a few gates to block his adventures, as red said, especially to the kitchen, stairs, bathroom.
I presume he is also climbing out of his crib, and it might be a good time to introduce him to a bed, and set some safety features to avoid a disaster.

You need to child proof your home ASAP so your little fellow does not get into the wrong stuff - like the stuff under the sink that could literally kill him if he decided to drink it. The bells on the doorknob is a good idea as well. I like that. You also should have SOME night lights on in your home at night. To have a home that is totally in the dark is not safe for anyone. A few night lights placed in strategic spots like hallways, kitchen, etc. can and will prove to be helpful versus bumping into the furniture or walls in the pitch dark.
You need to invest in those gadgets that keep little kids out of cabinets, drawers, etc. You need to store your knives in a safe place where he can't get at them. Kids see you using them and they are curious and want to try doing what mama does. You should only be inconvenienced for about 2 years before he grows out of this stage of wandering around at night.

A parent with a two year old has to child proof their home, knives and shart objects always in draws with safety latches, items within reach put away.
And child safety door latches are there for their protection, but I always put a buzzer on kids door
