First boil it in water without removing the skin.
Then after boiling, remove skin and cut/slice/dice as needed.

Mash them!
There is nothing better than a big plate of mashed potato with some red meat.
Pour a litle gravy over or mix in some cheese for extra flavor ;)

You can drain and mash them
Drain - make a potato stuffing like used in Twice Baked Potatoes

I agree. Mash them. You can also add some eggs to them later and make potato pancakes out of them, if you would like.

Oh well, I just assumed the OP meant what to do to avoid getting potatoes mushy while boiling.
Potato filled pastries is always an option.

Make creamed potatoes. Mash, add the butter, maybe a bit of garilc, salt and pepper.

Mashed potatoes usually excludes milk or cream, and creamed potatoes are prepared like mashed potatoes only that you add milk or cream to it at the end.

I usually leave a little bit of water it was boiled with and then add some milk, butter and pepper, and mash away! Yum, oh and everyone in my fam loves when I add cheddar to it.
