    The hydrolysis of proteins is the reverse of the condensation polymerisation of amino acids. The term hydrolysis refers to the use of water to break bonds. So of course you'll have water as reagent in the reaction.

    You therefore will have proteins and water as reagents.

    Then, you have to know that the reaction is performed under reflux, with a catalyst such as concentrated hydrochloric acid.
