I recently had a leak in my 2nd story laundry room. I getting ready to replace the base boards. Are there baseboards I can use in the room that are water proof so that in case it happens again I have a better chance of the water leaking into walls and subfloo

No such thing for walls or baseboards. However, if the washer leaked you can add a pan under the washer, same for hot water tanks. This is code in most towns for a second floor utility room. There is available plastic baseboard moulding, but I would go the retention pan route with a drain attached. They make them out of fiberglas and work well except if you have an unbalanced washer load they do scoot around if not attached some how.

Sure there is plastic molding but guzman was asking for a"water proof " baseboard. Water will leak under a plastic baseboard. Oatey, Mustee and Lasco to name a few all make washer pans.
