Schatz is like the adult version.
It's hard to describe in English. Schatzi is what you would say to a child. Schatz is what you would say to your husband, or an adult friend you care about.

Schatzen really isn't a word. If it were it would be the plural of schatz. In other words, sweetheart would be schatz, and sweethearts would be schatzen. But it's not really a word I've ever heard used.

You had used the word "schatzi's" (plural despite the apostrophe?) so I turned that into "schatzen."

Actually words like 'tooken' or botten' (for bought) were commonly used by back country people, settlers and you will still hear these colloquialisms being used from time to time by people brought up listening to it and using it at home even knowing the proper English usage. My mom was well educated, I am, but at times fell back to this at home amongst ourselves. So it is no indication of poor English ore being uneducated.

Words like "tooken" and "boughten" and "gots" are also kid-speak before they have figured out irregular verbs.

LOL... Alty, are you bored? I was up half the night with Boo, and he refused to nap today, so I'm about finished right now, that's for sure.

I'm not really bored. More dead on my feet than bored. I get silly when I'm exhausted. I've had around 10 hours of sleep this entire month. It's getting stupid.
