Those pesky people at Underwriters Labratories say you do, something about safety and burning down your house (they can be so unreasonable). Now if you have blown the fuse it has blown for a reason, usually poor air circulation. The dryer will function with it jumped out but I would seriously consider (insist) finding the source of the problem. Insurance companies are funny about such things causing house fires. They tend to keep their money if this is the cause of a fire. If you need more help let me know.

L210 is the maximum operating temperature it can reach or it pops it for good. They are not all rated the same due to the different locations they are placed in different machines (by the way you have some good eyes those are hard to read). The other consideration is yours is sensing the back cabinet temperature where some are sensing actual air temperature as in a Whirlpool. The two aren't the same and since we don't know the operating temperature of the other one I would not interchange them. Most of these are made by Thermo Disk but I don't have any idea what their internal part numbers mean.

Sounds like you may be shutting down on the motors' internal overload. I would suggest taking the dryer apart and giving it a good vacuuming to prolong the life of the motor.
