When you think of the Godparent's responsibilities that they agree to at the christening, yes it would be important to be christened yourself. The Godparents have the charge of raising that child in the same faith as their parents, should their parents die. That was how it was presented to me, when I was the Godmother of my two nephews and niece.
This is a question to ask their Priest or Pastor. Rules change, modifications are made and considerations are given for different circumstances.
Even though you are not christened, would that stop you from being able to provide the religious education to your cousin's son? I think you are respectfull enough to follow his parent's wishes.
