I have a 11onth old field spaniel, my 3rd field spaniel. He recently started being very finiky, barely eating.. but eventually eating.. if we leave it down. Hes playful, active, and no signs of issues with no trouble in the bathroom area.

I'm not sure I understand your question. He won't eat unless you "leave it down"? So leave it down.
