    Dinner Ideas
    Hi,

    Can anyone tell me a relatively easy dinner I can make for my boyfriend. He eats everything. So it gives me too many options. I want something that can easily reheat if he's running late--he never has a set time when he gets out of work; it's when his sergeant dismisses him.

    Ground beef Stroganoff. Brown the ground beef, pour off any grease, add a can of Campbell's chicken-mushroom soup, add half a can of water, allow to simmer 15-20 minutes or so. Just before serving, add a half cup or more of sour cream, and mix it together well. Serve with rice or noodles. Side dishes can be a green vegetable (peas!), chunky applesauce, another veggie of your choice.

    Lasagna is a lot of work. Boil ziti instead, cover it with sauce and meat and ricotta and mozarella, and bake until cheese is brown on top.
    Spanish rice. Uncooked rice with onions and other veggies and seasonings and canned tomatoes, and crumble hamburg on top, and bake until done.
    Roast a whole chicken with an apple and an onion inside, and a slice of bread, and some sage and basil and parsley.
    Make a big batch of mashed potatoes. Take a knife and cut a band around each potato instead of peeling. Boil, and when cool enough to touch, the skins will come off easily. Mash with milk and butter or cheese. Meatloaf. Mix with your hands in a big skillet, make a mound, and bake right in the skillet for 30 minutes.
    I like frozen crunchy fish fillets with peas. I don't bake them, takes too long. I put in microwave for a few seconds and then toast in a frying pan until brown on each side, about a minute each. I throw the peas right in the pan with them.

    I have a very simple recipe that my family loves. In fact, my husband begs for it.

    Mac and cheese medley.

    You'll need the following:

    Ground beef
    Spaghetti sauce
    Seasoning (whatever you like)
    Onion (your choice)
    Box of Mac and cheese

    Fry the meat until it's thoroughly cooked and browned.

    Add the spaghetti sauce, just enough to coat the meat, not make it runny. You don't want it to be the consistency of a sauce, you want it to be porridge consistency.

    Add your onions (if you choose) and seasoning (I use seasoning salt, garlic powder, salt, pepper, oregano)

    Make the mac and cheese as per instructions on the box.

    When both are done cooking, mix them together.

    It's like a grown up mac and cheese, easily frozen or refrigerated, and easily reheated. Total cooking time is around 30 minutes. :)

    I vote for tuna noodle casserole with cranberry sauce on the side.
    And maybe some garlic bread.

    It's only 12:30 in the afternoon in my neck of the woods. Is it too early for wine? I guess it's 5pm somewhere, so cheers! :)
