    If Lye can burn our skin, why is used in food?
    Lye is used in the pretzel making process, and even used to cure olives. But how is it that if we eat all that stuff, it doesn't harm us even though skin contact will cause burns.

    Simple answer: there is a food grade lye approved by the US FDA
