I have never heard of the term 'pinching' usually called 'deadheading'. Some flowering species have unusually stiff stalks and can't be done with fingers.
What else to use but scissors. That is why I asked if OP meant 'deadheading' ma0641.

Not always deadheading. You pinch or cut back the shoots so they branch and produce more flowers. Google "pinching back "
