Typically how long should it take for hot water to come out of the pipes? I have gas boosted solar hot water, and it takes 45 seconds for the hot water to come out. And I have to have the tap on full or it takes even longer. Is this normal?

Sounds a tad long but we have no idea how far you are from your tank. What is your psi and size of pipe?

I usually depends on how far each plumbing fixture is from the heating source. I mean, closer fixtures should get hot water faster than the farthest fixture in the home, right?

How far is your farthest fixture from the heating source? Is the issue the same at the close fixtures vs the far fixtures?

You would think so, but not in my house anymore. The bathroom is right next to the hot water system, and it takes just as long there as in the ensuite which is furthest away. I used to get hot water after a few seconds, irrespective of which tap I used, but something seems to have changed and I can't work out what is causing the delays.

If this is a new issue then perhaps you have a recirculating pump that is in need of repair or replacement.

Look at the hot water system and see if you can find a circulating pump (or two). Most likely the pump needs attention.

Otherwise, you could have a mixing valve that has failed and is allowing cold water to cross into the hot water system... would need a plumber to work on this.
