So basically I met a girl at a bar 3 weeks ago, and at the end of the night she gave me some contact info (not phone number). I added her, introducing myself.

At first, I just wanted to take it slow, and basically had no contact for a entire week. During the 2nd week, I started messaging her saying I will be visiting the same bar again, and asked her for a drink. She didn't reply straight away, but then gave me her number, all seemed fine. She couldn't make it on that night, so I called her, and she said arrange something this week.

I have not spoken to her since last Saturday (today is Thursday night) and I texted asking her if she was keen on meeting me on Saturday for a coffee. I haven't gotten a reply from her, has she lost interest?

Looks like it.. or there might be something keeping down her really busy to reply you back. Either way, you should divert your attention for the time being until she replies.

I did call her, she didn't answer, anyway I'm not going to bother. If she's keen she will get back to me.
