There isn't much we can tell you over the internet unfortunately as we can't see the dog.

Problems with the ears can include infections, allergies, bites, mites and heat rash.

I have Mini Poodles and one of them gets constant ear infections. It's nothing to do with environment but more with genetics as her mother was also prone to them.
We just regularly clean and pluck all hair out of the ear canal to prevent them returning.
Plucking the hair might sound cruel but it really does help and if done properly the hair does not grow back for some time. Some pet stores and vets actually sell a powder you put in the ear to get a better grip on the hair, or you can buy forceps.
A lot of groomers will just cut the hair off level with the end of the ear canal but this won't help.

    What's a newfie-poo?

What does the vet say about the continuous ear infections? I'm thinking your dog might have yeasty ears, which if not kept up with, can cause discomfort and an ear infection.

How are you cleaning the ears? Are you using a dry cotton swab? Or a lavage? Doing the ear lavage is more healthy and doesn't strip the natural oils in the dogs ear (yours too!). If you're not doing the lavage, maybe start that up. You can't hurt their ears. Just be darn sure that the dogs ear drum isn't blown and maybe talk to the vet about medicated ear solution. (? )

Hair in the ears will definitely add to the problem. But if you are getting the hair pulled regularly, then I would come back to yeast in the ears.

Some dogs just have to have ointment in their ears after every cleaning. You also might have to just make a point to clean his ears every week with the solution.
