My toes move by themselves what does this mean
My toes feel like they are bending to the side... almost like cramping up & I can't do anything to make them stop... I thought that it might be signs of a stroke, but I'm not sure??

It sounds like you might have a "Charlie Horse" which is cramping that I believe occurs when you are dehydrated. Try to stand on them, which should force them to relax a bit, and drink lots and lots of water. That should help.
