It could be that he likes you or it could be that working in a shop/store then the assistants are trained or told to be friendly and polite.
It does appear he makes a special effort when you're around, next time you go into the shop and he's not behind the checkout/till, why not stop and say hello and just go from there. Also check he's not wearing any rings, in case he's married.
Take it easy and slowly get friendly with him, ask him his name how long he's worked at the store, is he filling in time before going on to UNI or questions like this that are friendly but non invasive.
He`ll let you know if he's interested in time, just be friendly back and take it from there.
Also as an idea the next time you go to the store he works at have the money that he let you off with you and offer it to him or whoever is at cash register, this is a sign of good manners and will do you a lot of good and show that you're not hoping for a reduction when you shop there, not saying you do, just that its polite to offer to reimburse for let offs.
