    My cheesecake developed a hard top layer, what should I do?
    I baked my cheesecake too long and it developed a hard top crust. I think it will be hard to cup and want to know if I should try to remove the top layer. I plan to put a sour cream topping on it along with white chocolate curls. Will this topping soften the top layer making it not necessary to worry about the hard layer?

    I'd cut it off. Since you're putting topping over it, you should be able to cover up any uneven parts that might happen when you're cutting the top off. I'd take a long sharp, sharp knife and just run it under the top crust trying to take off only the crust.
