What bathroom dimmer switches are available?
I have seen bathroom mirror/light units with touch on/off and dimmer switches. Where can I get a (bathroom-safe) touch or proximity sensor switch that will do a similar job for the lighting I plan for a built in cupboard/mirror on the wall over the sink and toilet.

There is no such thing as a bathroom-safe dimmer. Any dimmer you get will be fine.
