    Hmm, sulphate can be written as sulfate, to be more precise, it is now better to write is as sulfate if you are using the IUPAC system. Things have changed, dear.

    That's true -- except that potassium bisulfate is not used as a preservative whereas potassium bisulfite is used as a preservative. The questioner may have mis-read his notes.
