I stripped my old cabinets of polyurethane and now we like the natural wood. Is there any product out there that will protect but won't yellow the lighter color of the raw wood?

Acrylic paints and coatings won't yellow over time. I'm not sure if this is what you want or not. Most varnishes have some yellow in them to start, so you'll have to look for a clear plastic coating.

Lacquer is my preferred finish for the interior wood.

Yes, lacquer won't be yellow. But, to have the best protection, if you do use a lacquer, I would suggest using one the has a high solids content.

I have been using Minwax brushing lacquer for bowels, pepper mills and furniture for a while now. I kind of like it. However, I spray it on, undiluted. Very little orange peal. Don't know how it works brushed on.

I finished using minwax latex stain. I had to hunt it down, because minwax was bought out by Sherwin Williams, but it was worth it. I top coated with behrs polyurethane. They came out better than you coul imagine. My wife to this date, a year later, still comments on how fantastic they look.
All my problems were due to the new EPA guide lines on the VOE allowed in stains. All the old stains were pulled from store shelves and replaced.
