    Canning vegetables
    I would like to can hot peppers but have read that I must use a pressure canner to kill the bacteria. What if I was to cook the peppers first? I like to roast them in the oven. If I did this and then filled with oil and canned using an alternative method, would that be OK. Won't cooking the peppers kill the bacteria. Everything I read about having to use a pressure canner is when you start with raw peppers.

    The onlt time that I know that you can HWB a low acid veggie is if you pickle it (vinegar)

    Peppers will take 11 lbs pressure for 35 minutes, (in a pressure cooker) which is longer than corn to kill the bacteria.

    My Mother told me at one point to just cook everything longer, but that doesn't work. The temperature does not get high enough.
