    DIY fruit enzyme ( fermentation + assay )
    Hi everyone,

    I'm now currently having a research on food fermentation. My Subject is Carrot, I would like to get more details on carrot enzymes.
    As we know, beta-carotene is major in carrot, but besides that, what else the enzymes that contain within carrot?
    What are those enzyme assay(method) for it,?

    I don't know anything much about carrot enzymes other then the beta carotene
    I do know about digestive enzymes, papaya enzymes and bromelain (pineapple) enzymes

    Carrots have alpha carotene and amylase,
