    Should I see an Endocrinologist?
I'd like to be tested for hypopituitarism and hypothyroidism because I am overly tired, losing my hair, etc. Both of my grandmas have diabetes. Should I see an endocrinologist?

You are on the right track, endocrinology is the correct discipline for thyroid and diabetes but losing your hair and being always tired does not necessarily mean you have diabetes or a thyroid problem. You should visit your personal physician first and have him do complete bloodwork and if needed, will send you to a specialist. I believe you need a referral in the first place in order to see a specialist.
