    Oh, I'm stuck between a hard place and a pumpkin
    Here's the Situation

    I'm a young man of 15, and me being my mothers son. She's screwed me over with having a huge array of foods. I love pretty much everything. While my father on the other hand.. well lets just say he could live off BBQ and Wendy's for awile. But that's not the point.

    Now me and my mom love to cook together and try new things, and earlier today we bought some canned pumpkin. Now Me Being a Wrestler and having to watch what I eat I can't be eating Pumpkin Pie (well.. Not yet:D) But yet I'm really really really in the mood for something with Pumpkin...

    So Is Their anything low Calorieish dinner foods I can do with Pumpkin? I did a little research on Food Network and I found a lot of Pumpking and Pasta dishes. Now Normally I would love to do those but because of wrestling I can't be doing a lot of things with Cream. (Though, We could switch it with half/half).

    So Wondering... Anything out there good for me?

    Try this one Guy! This is a recipe from one of the worlds most renowned trainers Bob Greene. He is one of the guys that helps out on The Biggest Loser, and many other shows, so his recipes are very healthy, and low cal. Give it a try!

    Hope one of those three appeals to you. A lot of these recipes you could definitely go with skim milk too. Or you're right, you could use half 'n half.

    I find pumpkin icky myself... LOL!

    If you've finished the canned pumpkin in the house, but if you're still craving the big orange berry (yes, it's a berry... well, it depends who you ask: pumpkins), I suggest you pick up some fresh sugar pumpkins.

    First of all, you get the seeds this way. You can toast them anyway you like, and they're really good for you.

    Second of all, while pumpkin is actually one of those products that really takes well to being canned, fresh is always better.

    Fresh pumpkins are also surprisingly easy to prepare. Just roast it in the oven, and you're in a heavenly little place. I roast any vegetable I can get my hands on. The roasting brings out the natural sweetness and complex flavors of the pumpkin (or any other squash for that matter), and all you'll need to do is drizzle it with extra virgin olive oil to taste (get the best you can buy), and sprinkle it with a little salt. It's also great when cubed and mixed with some whole herbs like rosemary or sage.

    You can purée it, and use extra virgin olive oil instead of butter. You don't need to add any cream at all. Add salt, and give it a taste. Fresh ground nutmeg is also great in this.

    If you get the smaller sugar pumpkins, you can also cut the top off, roast them whole, and then stuff them with pumpkin risotto or a mixture of wild rice, sauteed carrots, celery, the pumpkin itself and/or lean sausage... anything you like.
