What are the signs and symbols etc that a guy really likes you and doesn't just want you for sex or whatever?

Your intuition.
And if he calls you.
And if he is more interested in you than making out.
But mostly, listen to your inuition. If he's not the one, someone much better will come.

Unfortunately, there's no real way to know. Sometimes, you just need to go with the flow and you'll find that out sooner or later, along the way...

But if you have a particular example of a guy who might like you, why not share and it'll be easier for us to give you our opinion although we obviously can't tell exactly what his intentions are.
