I always use cold water only for laundry, but is there a way to turn off the hot water when there's a single valve shut-off on there? Even when washer is set to cold water only, there's still water coming thru the hot hose :(

Your hot supply line attaches to a spigot near the wall, just close that spigot or faucet.
They sell plug for hose connection thread. Install the plug on the hot water side and all you get is cold water only.

Yup, called a boiler drain cap or female hose cap... exactly as posted above by Milo. I suggest purchasing a brass cap... let's you tighten it on to the valve without worrying about the plastic splitting!

You still have to close the hot spigot first to install that cap. Actually, once you close the spigot the cap is unnecessary.
It is a single handle faucet. One handle operates both hot and cold.
