What could cause low pressure in just the hot water in only one shower? I have copper pipes, walk in shower with a two knob hot and cold handle set up.

Is that pressure and temperature balanced valve, like American Standard ?
If so, your cartridge may need to be replaced.

If not than you have Hot and Cold valves than check washer at Hot water stem.
The washer itself could be loose blocking incoming water.
