It is a trial and error process. Usually it is rather obvious. If you wash your face in the morning and come evening does your face feel tight or itchy? Probably dry. If you run your hand across it is it slick or is there a sheen to your face? Probably oily. If you break out or become irritated when wash your face with regular soap than you're probably sensitive. Other wise you're probably normal or combination.
The added complexity comes when you actually use a product. In one product line you could be a sensitive, in another you could be oily or combination. As well the order in which you do your cleansing could alter which product you use. In the end it will be a trial and error. Find something that works and use that. It can vary depending on your climate and your weather patterns. You could use a dry skin treatment in the winter and a combination in the summer.
