I also want to run the water supply lines from my claw foot tub to the wall, due to there not being enough room. Couldn't I use a straight (one used for a deck mounted faucet) vintage line to attach to the wall from the tub and cut off the excess?

Yes. Make sure to use a bending tool so you don't crimp the tubing.

If you are doing a vintage tub I would be using chromed copper risers. Although they are soft copper, I would use a spring bending tool to make a nice bend without possibly crimping the riser.
