I'm in the process of replacing the old galvanized pipe that drains my kitchen sink and dishwasher. The galvanized joins the larger cast iron drain pipe in the basement. This section happens to be the most "upstream" section of my drainage line is fairly accessible.
At the junction of the cast iron and galvanized there is a galvanized elbow threaded into a female section of the cast iron. There is a hole in the galvanized not too far up from the elbow.
Should I try to remove ALL of the galvanized and thread a pvc adapter into the cast iron OR try to leave as much as I can down from the leak and join with a rubber clamp fitting?

You will ABSOLUTELY want to remove all of the galvanized fitting. Here, when you remove that threaded elbow you should find a great deposit of minerals/sediment at the female cast iron threading. This "deposit" is a result of an electrolytic effect between the dissimilar metals (cast vs. galvi.) and needs to be dealt with now for the best result.

Remove the threaded elbow... my guess is that it will look a lot like the image below(see image):
