Installing ceiling fan and wall switch. Do I go from power source to fan to switch or power to switch to fan?

Depends on where the power source is located.

Power would come from j-box in attic.

Then you would run a switch loop from the ceiling to the switch and back. Carry power on both white and black with a single 14/2.
