Help me write an email about a choice of dates/times for an employee to choose from for a meeting?
Is this for a course you are taking?
"Please choose a time between 10 and 3 on one of these 3 days: July 10, 12, or 14"
I don't understand how it can be difficult.

Normally its best not to give any choice at all. The normal thing would be to announce a meeting in advance so people can clear their schedule ahead of time for the meeting to take place.
My library director would announce two upcoming staff meetings which would then pick up all staff members who worked in shifts -- e.g. Monday at 1:30 p.m. or Tuesday at 8 a.m. Employees could come to either one.
Cdad is right the bigger the group of people the more people that are going to say I am not available. You could send a message asking which of these days and times are best for each person to hopefully get the best turn out.
