I shoplifted at winco food store and they said I have to pay $150 in 30 days or I have to go to court. What do I do?

The choice is obvious isn't it? You pay or go to court.

You pay them a civil penalty of 150 dollars.

If not, you go to court, get a record, have to pay them value of items taken, plus court costs plus fine, Most likely 500 or more dollars plus be on probation with possible probation fees.

Sounds like a simple answer to me
