Let's assume that your pump is getting up to some set pressure and cutting off rather than just running constantly. If that is the case, then the switch is the next place to look. Remove the grey cover. There are two nuts. Turn the larger, center nut clockwise (with the breaker off) a full turn. This will increase both the cuton and cut off pressure points. Turn the power back on and see what you have. Keep adjusting until you get what you want.
Be aware that the little tube leading to the switch can clog and cause the switch to turn off/on sluggishly. Checking that tube is a little more trouble but might be worth it.
Where are you measuring the pressure and what is it when the pump turns off? Whole house filter?
