The poles should be identified by the wiring instructions or on the instructions on the side of the motor or in the end bell electric cover. It is important because you said it was a hot tub motor and those have to be on a Ground Fault Circuit for safety and it needs to be wired into the circuit correctly. Also make sure you have the correct voltage setup on the motor. Usually these larger motors are 220 Volt.

Many of these hot tubs are dual voltage and you can run them on either 120 or 240 volts. The amperage is half for 240 as opposed to 120 volts, and the starting amperage (called "locked rotor amps" as in diagram) is very important because you must consider this when running wire to a hot tub. Make sure you have a ground fault breaker, too. You will notice on chart that a 115 volt 1/2 hp motor has 64.4 amps starting amps while the same motor on 230 volts draws 32.2 amps to start.
