Do not know the parking rules in your city, or who gave you the ticket.
Not guilty is not even a option in many places. In some tickets are even handled by private parking companies.
But they ticket, if you don't pay they turn it over to collections, no court, no hearings.
On the ticket is usually listed the procedure for fighting it. Did you follow that procedure. Did you send the information with receipt confirmation?
I don't think your explanation is going to get you found not guilty - "l/8 of the sign was hidden under a construction canopy. I did not see it. It said no parking 8 to l0a.m. I got the ticket at 6p.m. but when I went back to take photos I noticed the sign had another sign on top of it and it was crossed out in black felt (?) pen and could not be read. It' a $60 ticket. I took photos. Can I win this one? Am I better off going in person."
One-eighth of the sign was hidden and you couldn't see that the no parking hours were 8AM to 10AM - but you parked at 6PM?
Why did you get the ticket if you weren't parked outside of the legal hours?
What "other sign" was on top of it - and how it looked when you took photos is immaterial. How it looked when you got the ticket is what matters.
You scheduled a Court appearance and are still getting additional penalties added to the original ticket?

That appears to be OP's major defense to the ticket.
I assume that OP didn't have a camera at first and came back with one. I think this is arguably how it looked when OP got the ticket. If not, seems like the burden of proof is on the city to show different.
If OP is exonerated, the additional penalties will not apply. If the ticket sticks, so do the additional penalties, I suspect. One way to avoid the extra penalties would be to pay the ticket under protest, and expect to get reimbursed after the trial.
